Hey friends! Hope you had a wonderful Thanksgiving! Are you stuffed? Nah, you’re ready for all the leftovers! Best part if you ask me. You all know we (the Cotters) aren’t too crazy about plain roasted turkey. But using turkey leftovers in recipes, for sure! Which is why I’m obsessed with Turkey Paleo chili,turkey cobb salad , and now this turkey chow fun tamari zoodles recipe!

It’s my new favoriteAsian inspired leftover turkey recipe! Super easy to make, light, lower in carbs, gluten free, and oh so tasty. Plus I get to use one of my absolute favorite stir-frymaking ingredients; Tamari! Yes, Tamari and Turkey and zucchini noodles (aka zoodles), oh what fun! Haha, pun intended.

So before I dive into this turkey chow fun Tamari zoodle recipe, let’s talk a little bit about Tamari sauces, mmm k? You’ll love knowing what makes this gluten free Asian sauce super duper special, and healthy.

What better way to nourish your body while tackling those thanksgiving leftovers than with this naturally gluten free Turkey Chow Fun zucchini stir fry recipe, made with tamari sauce?!

Excuse the run on sentence, but I get excited!

Ya’ll, this dish is light and tasty! The best of both worlds. It’s also incredibly EASY to make.

I’m thinking you need an easy recipe after a week of holiday meal prep and festivities.

What vegetables can you zoodle?

Don’t worry, if you don’t have zucchini to make zoodles, there are a LOT of veggies you can turn into noodles. You can zoodle:

  • squash
  • potatoes,
  • sweet potatoes
  • parsnips (hmm, are those called poodles? Haha)
  • carrots
  • broccoli stems
  • cucumber

The list goes on… just use your imagination and grab those raw veggies from the fridge!

Description

A Turkey Chow Fun zucchini stir fry recipe made with tamari zucchini noodles! This healthier chow fun stir fry is light, naturally gluten free, and lower in carbs. A chow fun recipe that puts those leftover veggies and turkey to use.

Ingredients

Scale

  • 3 zucchini (small-medium)
  • ½ lb roasted turkey or uncooked turkey breast (diced or sliced into strips)
  • 1 cup bean sprouts
  • 1 small red chili pepper, chopped
  • 1 tsp sesame oil
  • 23 tablespoon avocado oil or peanut oil
  • ¼ tsp white pepper
  • Sea salt
  • 1 bunch scallions, cut 1-2 inches
  • 1 garlic clove, minced
  • Sesame seeds

Sauce:

  • ¼ tsp baking soda
  • 1 tbsp rice wine vinegar or shaoxing wine if you have it (in Asian supermarkets)
  • 2 tbsp [url] San-J Gluten Free Tamari Soy Sauce ∞http://san-j.com/products/organic-tamari-gluten-free-soy-sauce[/url]
  • 2 tsp chili paste (or Sriracha)
  • 23 garlic cloves, minced
  • 2 tsp grated ginger or ½ tsp ground ginger
  • 2 tsp to ½ tablespoon coconut sugar
  • *optional 1tbsp [url] San-J Gluten Free Mongolian Sauce ∞http://san-j.com/products/mongolian-sauce[/url]

Instructions

  1. Spiralize the zucchini and pat dry with paper towel. Make sure to get out as much moisture as possible. If you don’t have a spiralizer, you can julienne cut or peel into strips.

Make sauce:

  1. Place half over turkey to marinade
  2. if using uncooked turkey, add 1-2 teaspoon potato starch
  3. Add oil and 1 garlic to stir fry pan. Let it bubble and become fragrant 1 minute.
  4. Add your turkey/sprouts.
  5. Cook 1-2 minutes, longer if meat is uncooked.
  6. Add your zucchini noodles and the other ½ of sauce.
  7. Toss meat with tongs on high for 2-4 minutes.
  8. Add scallions/pepper. Toss again.
  9. Drain extra sauce but reserve ¼ to ⅓ cup sauce to serve on top of noodles.
  10. Top with sesame and chili flakes to garnish. (Feel free to add these in the pot before serving as well).
  11. Add your reserved sauce to each bowl if desired.

  • If you don’t have zucchini, feel free to use another veggie to spiralize for the noodles. Squash, potato, sweet potato, etc.
